Pulled Pork Sliders
Ingredients:
Serves 2 (I normally quadruple this recipe, using a 3-5 lb pork roast)
1/4 cup brown sugar
1/2 tsp cayenne pepper – I only double or so the cayenne pepper because I don’t like things too spicey 😉
2 tsp salt
1/2 tsp pepper
1 lb boneless pork shoulder
1/2 cup cider vinegar
4 garlic cloves, chopped
1 cup water
4 small burger rolls – can use hamburger buns or rolls
Directions:
1. Preheat over to 350, with racks set in the lowest and highest positions.
*I cooked a 5 lb roast at 300 for about 4-4 1/2 hours
2. Combine brown sugar, cayenne pepper, salt and pepper. Rub pork with spice mixture and place in a Dutch oven or large ovenproof pot.
*I have also used my crockpot on low if you want it to cook all day
3. In another bowl, combine cider vinegar, garlic cloves and water and mix well. Pour over pork, Cover and place in the oven. Bake until pork separates easily when pulled with a fork, about 1 to 1 1/2 hours.
*If you cook it longer on a lower temp, it will be more tender 😉
4. Transfer pork to a clean work surface, reserving pan juices. Using a fork to pull, shred the meat. Transfer shredded meat to a large bowl and toss with pan juices to moisten the meat (you may not need all of the liquid).
*I also add some Sweet Baby Ray’s barbeque sauce to taste
5. Divide pork between 4 burger buns. Top with coleslaw and barbecue sauce, if desired.
